We've had a great time - me and my three cookie monster's, but recent events have forced us to go on hiatus...
"Why", you ask?
Let me share with you the weather forecast...
Tuesday, June 2nd - 85 degrees
Wednesday, June 3rd - 85 degrees
Thursday, June 4th - 86 degrees
Friday, June 5th - 72 degrees
You get the picture, right?
We feel so lucky to have this gorgeous weather and, by the looks of it, there's plenty more to come!
But how does this have anything to do with cookies?
We're in the Pacific Northwest.
The very rainy Pacific Northwest.
80 degrees is pretty darn warm up here in our neck of the woods, especially when we're not equipped with the luxury of having air conditioning at our fingertips!
Don't get me wrong - I am NOT complaining! We have been waiting for this! It was a long winter and an even longer and dismal spring.
The sun has finally come out and we're loving it!
But you can understand why we're not so keen on the idea of turning on the oven...

Plugging in every fan we own can only do so much in an already hot house - no need to go adding more heat!
So, until further notice, you can find me and the cookie monster's out on the deck with tall glasses of lemonade and half-moon's of watermelon!
Stay tuned though because Owen and I have big plans for filling the cookie jar again!
We're just going to have to start exploring the No-Bake recipes...

This weeks "cookie" isn't really a cookie at all...

...but it works perfectly In The Cookie Jar, so it counts!
Last week I had asked if anyone had a great recipe for lemon cookies.
I got this response from Ashley:
Yummm... these aren't exactly cookies but they are heavenly and your lemon cookies prompt suddenly made my mouth water as I started thinking about these...

If you've never tried them you MUST!
So, try them we did!

They're beyond easy - anybody could make these!
They're quick, they take very few ingredients and the results are worth far more than the effort that it takes to make them!
Just 12 minutes in the oven in mini cupcake tins, then a quick dunk in a sweet, fresh, lemon glaze and you've got a two-bite treat that's perfect for spring and summer!

Ashley summed it up perfectly and it's worth repeating...

Three months have passed by!
Baking cookies once a week...
all for the pure enjoyment of my kids!
It's been fun!
Seeing the excitement on their little faces as the first batch comes out of the oven is always the very best part!

This week was definitely a use-whatever-we-have-in-the-pantry/freezer kind of week!
We've been busy, but lucky for me, stashed in the back of the freezer was a package of
Nestle Swirled Dark Chocolate & Raspberry Morsels
Before you think to yourself
"those sound yummy - I'll have to put them on my list",
don't bother.
Nestle doesn't make them anymore.
Truth is, they haven't made them for quite a while!
And with that, I realize I am admitting just how long they have been sitting in the back of my freezer...
Owen was quite excited about them though!
He happily volunteered to sample the frozen chips, the dough and the warm, fluffy cookies right out of the oven...
Two thumbs up from him!I will admit, I will gladly pass them by...
not my favorite.
Maybe that's why Nestle doesn't make them anymore...?

Just substitute the chips of your choice for the chocolate and raspberry chips that we used.

I am really wanting to make some sort of lemon cookie!
I think I'll plan that for next week...

Yes, week Ten of In The Cookie Jar passed by without any cookies being baked...
But, in my defense, I didn't forget! It has just been a busy past couple of weeks for us!
Luckily, my kids didn't have to go without.
(As if it would have killed them to have to go without cookies for a week? Hardly! But it does make them happy and I did make a promise!)
What I wasn't anticipating when I began my weekly filling of the cookie jar, was how many cookies I would be able to freeze and save for later! So, like last week, when there wasn't a free day to bake, I just grabbed a bag of frozen (but still homemade!) Snickerdoodle's and the kids never knew the difference!
Whew!
This week I had to use what ingredients I had in the pantry. Ellison got sick yesterday and running to the store today wasn't an option. After looking through the top rated cookie recipes on AllRecipes.com I found this recipe for:
Soft Chocolate Cookies
A simple recipe with few ingredients that was perfect for add-in's!
We had a bag of Mint Chips in the freezer just begging to be used!

I followed the directions exactly as they were written and I'd say they turned out ok. Not bad, still yummy, but not great. And definitely not what we had in mind when we went searching for this kind of cookie.
The recipe says to flatten, then bake.It was getting late and towards the end of the double batch of dough, I forgot to flatten the rolled dough balls and they came out of the oven extremely puffed up. So I flattened them right before I took them off the cookie sheet to cool.
The result:
Perfection!
We will definitely be making these again. Except from now on, the cookies will always be flattened after we bake them. They turn out perfectly dense! Exactly as a ginger molasses cookie should be!Enjoy!

Can you guess what kind of cookies we made this week?
Owen has been asking to make these ever since he saw an ad in a magazine for them at Christmas time!I decided it was time to give in...
Note: It took hours for the Hershey's Kisses to become solid again after adding them to the tops of the just baked cookies, which means that several hours passed before I was finally able to put them into the cookie jar! It proved slightly difficult to keep three sets of little hands away from the oh-so-tempting cookies!However, they had a great time adding the Kisses to the top!
Lots of fun for them!

I always think of Chocolate Crinkles as a Christmas cookie, but yesterday morning as I was running out of the house to play chauffeur to the kids and their school schedules, I remembered that I had forgotten to find a cookie recipe. I wanted to go to the store while I was out instead of having to make a second trip, but I had already turned off the computer (in an effort to be a bit more energy conscious when I'm not at home), so I had to rely on recipes that I had printed out in the past. This was the first one that I came across and Owen was completely on board when I asked him if he thought these would be ok for this week!
A warning if you're considering making them:They are messy!!
Messy to make and messy to eat!
These will not be getting packed in school lunches.
The kids each had one when the first cookie sheet came out of the oven and by the time they took their last bites, they were covered in powdered sugar!
*FYI*Be sure to read the reviews before you make this recipe. There are some great and useful bits of information to be found!
I didn't realize until I was halfway through baking them that placing the dough in the freezer between each baking would help with rolling them out.
Next time, I will be sure to read the reviews first!
If you like chocolate, you'll love these!
They are perfectly fudgy and chewy!
Worth the mess in making them, for sure!

I will admit (and actually, I think I have before)...if a cookie doesn't have chocolate in it, my first instinct is to say "no thank you".
If it has raisins in it, don't even bother asking me.

This photo of our cookie jar should be evidence enough that these cookies are really, really good!If you look back at past In The Cookie Jar posts you will see that every week our cookie jar is filled to the brim. Normally I make a double batch to ensure that we have cookies to last all week long, but this week I only made a single batch. Going away for the weekend and spending a few days being sick messed with my cookie schedule...
I expected to have a cookie jar that was at least half way full by the time I was done pulling the last cookie sheet out of the oven. Not...even...close.
Here's why...
I couldn't keep the cookie monster's out of the dough!
It was SO yummy!
I did a couple of things differently than the recipe called for - one out of necessity and the other out of personal preference.I realized when I got to "1/2 tsp. ground cloves" on the recipe that I didn't actually have any ground cloves. Oops! I did a quick search online to see what substitutes I could use and it seemed like All Spice or Pumpkin Pie Spice would be adequate.
I decided to go with All Spice.
The other change was that I used Golden Raisins instead of regular raisins. Like I said, not a huge fan of raisins, so I thought I would switch it up.
Delicious!

Super easy to make!

I think an addition that would send these cookies right to the top of the favorites list would be to add mini chocolate chips!
But, that's a bit predictable coming from me, right?
I'll definitely have to try that next time!
